Vinification: Late harvest in crates and drying for about 3-4 months on cane mats in ventilated rooms. The healthy grapes are destemmed and crushed, and the juice is placed in small wooden barrels (caratelli).
Aging: In environments subject to strong temperature fluctuations for at least 3 years in sealed oak barrels, without racking or topping off.
Tasting notes: Bright amber color. Fragrant and clean aroma with notes ranging from apricot jam to walnut husk.
Pairings: In Tuscan rural tradition, it is the wine of hospitality and courtesy. Perfect with almond cantucci, and pairs well with blue cheeses like pecorino di fossa and spicy gorgonzola.
Serving temperature: Serve at 5-7°C as an aperitif, at 16-18°C with dessert.
