Vinification: The grapes are hand-picked and de-stemmed and macerated for a few hours at low temperature in a lung press with dry ice. Soft pressing with cold clarification of the must.
Fermentation and vinfication in Terracotta anphore. Aging in bottle for 6 months.
Organoleptic Notes: Intense scent with marked notes of white pulp fruit and yellow flowers (Broom).
Light impressions of vanilla, aromatic herbs. Elegant on the palate with good acidity, slightly savory with a mineral flint finish.
Pairings: Excellent with seasoned pecorino cheese, also spicy or with creamy blue cheese. Fantastic with elaborate dishes of baked fish such as cod mantecato or crustaceans, perfect on wildpigeon.

Strong and balanced alcohol content, with an alcohol level of 13.50% supporting the rich structure of the wine. Limited Production: only 500 bottles produced, each sip of this wine represents an exclusive experience.

Vinification Process

The vinification takes place in terracotta amphorae, an ancient practice that promotes natural micro-oxygenation and gives the wine a unique quality without affecting its flavor. The grapes are hand-harvested, placed in crates, and destemmed, followed by fermentation on the skins which intensifies the aromatic profile. The refinement concludes in the bottle for at least six months, perfecting the harmony of flavors.

“PerBruno” stands out for its intense aroma, with evident notes of white-fleshed fruit and elderberry, enriched by nuances of aromatic herbs.
