Vinification: Prolonged maceration on the skins for about 25 days, with daily pump-overs and délestage, to encourage a balanced extraction of color, tannins, and structure.
Alcoholic fermentation occurs spontaneously with indigenous yeasts at controlled temperatures, to preserve the authenticity of the grape variety and the expression of the terroir.
Aging: The wine matures for 36 months in large Slavonian oak casks and fine-grained French oak barriques. It then completes its evolution with at least 6 months of bottle aging before release.
Tasting notes: Deep ruby red color with garnet highlights. The bouquet is broad and profound, with notes of ripe cherry, leather, and sweet spices. On the palate, it is elegant, structured, and harmonious, with silky tannins and a long, persistent finish.
Food pairings: Ideal with robust meat dishes, game, braised meats, and aged cheeses. Also perfect as a meditation wine.
